Hearty Pre-Paycheck Stew
Components:
- Two tsp olive oil
- One chopped onion
- two to three sliced carrots
- two to three celery stems, cut
- three minced garlic cloves
- One pound (450g) of diced potatoes (any variety)
- One 14-oz can of chopped tomatoes with juice
- Four cups of broth (chicken or veggie)
- One can (15 oz) of washed and drained beans (such as kidney or chickpeas)
- A single tsp of dried thyme
- One tsp of paprika
- One tsp of dehydrated oregano
- To taste, add salt and pepper.
- two cups of frozen mixed veggies, or whatever is available
- For garnish, use fresh parsley (optional).
Guidelines:
Cook the Base:
- Heat the olive oil in a big pot over medium heat. Add the celery, carrots, and diced onion. Vegetables should be sautéed for five to seven minutes to soften them.
Add the potatoes and garlic.
- Add the minced garlic and continue cooking for a minute. Add the potato dices after that.
Mix the ingredients together:
- Add the broth and diced tomatoes. Add the oregano, paprika, thyme, beans, salt, and pepper. Heat till boiling.
Reduce:
- After lowering the heat, simmer the potatoes for 20 to 30 minutes, or until they become soft. Add the frozen mixed veggies during the final ten minutes of cooking if using them.
Modify the seasoning:
- If necessary, taste and adjust the seasoning.
Serve:
- Spoon the stew into bowls; if preferred, sprinkle with fresh parsley.
