Air fryer Coconut Chicken
These handmade chicken strips take only 5 minutes to prepare and 10 minutes to cook; they’re so delicious, I generally make double! This meal tastes so good and comes together quickly that it is impossible to go wrong?
The chicken is kept moist and tender while the outside of the panko combined with coconut flakes gets incredibly crispy. My children have an obsession.
Components
- One pound of pre-cut chicken tenders (about five pieces)
- One tablespoon of vegetable oil. I make use of avocado oil.
- One large egg
- 1/4 cup of half-and-half or buttermilk
- A half-tsp salt and pepper, or according to taste
- 1/2 teaspoon your preferred seasoning. I seasoned my food with Grill Mates Roasted Garlic and Herbs.
- 1 cup coconut flakes with added sugar.
- One-half cup Panko breadcrumbs. or ordinary breadcrumbs.
- Apply oil spray
- Make your own chipotle dipping sauce (optional).
Guidelines
- Whisk the egg and buttermilk together in a medium-sized bowl.
- Panko and coconut flakes should be combined in a medium-sized shallow dish.
- Place the chicken strips, oil, seasoning, and salt & pepper to taste in a medium-sized bowl. Apply generously to blend
- After dipping the chicken strips into the egg mixture to coat them, fully coat them with the coconut flakes/panko mixture. Using your fingers, pour the coconut mixture if necessary.
- Set the air fryer’s temperature to 360°F/180°C.
- Gently place the chicken strips into the tray or basket of an air fryer. Allow them some room. Avoid overlapping. Work in groups if necessary.
- For 10–12 minutes, cook the chicken in the air fry mode at 360°F/180°C, turning it over halfway through. 165F internal temperature for the chicken, or until the coconut flakes golden brown.
- Accompany with your preferred dipping sauce. Delectable

Getting ready:
Select Unsweetened Coconut: To avoid burning and preserve a savory flavour profile, make sure you’re using unsweetened shredded coconut.
Cut Chicken Evenly: For consistent cooking and crispiness, cut your chicken into pieces that are around the same thickness.
Double Dip (Optional): You can choose to double-dip the chicken in the egg and coconut mixture for an extra-thick and crunchy coating.
Don’t Forget the Oil: Although air frying uses very little oil, a little mist or brushing with a high smoke point oil, such as avocado oil, helps provide the best possible browning and a hint of crispness.
Cooking:
Preheat for Even Cooking: To guarantee a hot atmosphere for even searing and crispy results, preheat your air fryer for a few minutes before adding the chicken.
Prevent Overcrowding: To ensure adequate air circulation and even cooking throughout, allow room between the chicken pieces in the basket.
Shake or Flip: Halfway through cooking, give the basket a small shake to ensure even browning and crispness, or turn the chicken pieces one at a time.
Cooking Time Is Crucial: The amount of time required to cook chicken pieces varies based on their thickness and size. Use a meat thermometer to monitor the doneness of the meat (an internal temperature of 165°F is required for safe consumption), and start with a shorter cooking time.
