Air Fryer Coconut Macaroons.
Nut-free, sugary, and precisely what you would anticipate from a coconut macaroon! The texture is chewy and slightly sticky on the inside, with a crispy exterior. A pleasant bitterness from the chocolate balances out the sweetness. These are very simple to make, make excellent gifts, and freeze well!
Components
- One package (14 ounces) of sweetened flaked coconut
- ⅔ cup condensed milk with added sugar
- 1/4 tsp kosher salt
- One-half teaspoon of vanilla extract
- Two big, room-temperature egg whites
- Eight ounces of chopped bittersweet chocolate
Guidelines
- For ten minutes, preheat an air fryer to 320 degrees Fahrenheit (160 degrees Celsius). To fit the air fryer basket, cut a piece of parchment paper, leaving 1 inch on each side for handles.
- In a big bowl, combine coconut, condensed milk, vanilla, and salt.
- Using an electric mixer fitted with a whisk attachment, beat the egg whites in a medium-sized bowl on medium-high speed for approximately 90 seconds, or until stiff peaks almost form. Add the egg whites to the coconut mixture and stir.
- Spoon level tablespoons of the coconut mixture into rounds, about six at a time, and set them on the parchment paper while working in batches. Gently place the parchment paper with the coconut rounds inside the air fryer basket.
- Cook for 9 to 10 minutes, or until golden brown and set. Using the same piece of parchment paper, remove the parchment from the basket, place the macaroons to a wire rack, and repeat the process with the remaining coconut mixture.
- In a medium-sized microwave-safe bowl, heat chocolate for 30 seconds on high power. Stir. Once melted and smooth, continue microwaving and stirring in 30-second intervals for roughly 90 seconds.
- Monetize the bottoms of the macaroons and then place them on a baking sheet coated with parchment paper to set. Allow chocolate to set, which should take around half an hour.
Notes from the Cook:
- You can add wonderful festive sprinkles or Rice Krispies(R) to them to give them a little more heft.
- For a unique twist, you might coat the chocolate in chopped pecans or another type of nut.
