AIR FRYER ENCHILADAS
A personal favorite of mine for Taco Tuesday are Air Fryer Enchiladas. Ideal for a hectic weekday and a fantastic dish to satisfy everyone’s appetite! This is one of those dishes that you just must make in your air fryer since even finicky eaters will love it! The family as a whole will be lining up for seconds of this dinner.

Components
- One pound of chicken, ground
- Taco Seasoning, two tablespoons
- Eight corn or wheat tortillas
- 15 ounces of rinsed and drained black beans
- One can of red enchilada sauce
- One cup of shredded Mexican cheese
- One cup of freshly chopped cilantro
- half a cup of sour cream
Guidelines
- When the ground chicken is cooked through, add it to a skillet and sauté it over medium heat. Mix in the seasoning for tacos.
- Place some spiced chicken over each tortilla.
- With the remaining tortillas, proceed to assemble the enchiladas after adding the black beans.
- Cover the bottom of the air fryer with a tiny piece of foil to prepare the air fryer basket.
- After rolling each enchilada, put it on top of the foil in the air fryer.
- Once the enchiladas are all the way filled, cover them with the enchilada sauce.
- Evenly distribute the cheese on top.
- For five minutes, air fried the enchiladas at 350 degrees Fahrenheit. The enchiladas should be taken out of the air fryer carefully.
- Garnish with any leftover cheese, sour cream, and freshly chopped cilantro, if desired.
