Air Fryer Pecan Pie Muffins

Rich, buttery pecan pie flavours come together in a delicious muffin shape with these Pecan Pie Muffins. They are an enticing delicacy for any occasion, with a very gooey centre and a slightly crunchy top thanks to their air fryer preparation.

INGREDIENTS:

  1. 1 cup packed light brown sugar
  2. ½ cup all-purpose flour
  3. 2 cups chopped pecans
  4. 2/3 cup butter, softened
  5. 2 eggs, beaten

METHOD:

  1. Set the Air Fryer’s Temperature to 325°F (160°C) before using it.

Get the batter ready:

  1. Combine the flour, brown sugar, and chopped pecans in a medium-sized bowl.
  2. Beat the eggs and softened butter together until smooth in a another bowl.
  3. Stirring until just incorporated, gradually whisk the dry ingredients into the wet mixture.

Get the muffin cups ready:

  1. Grease small oven-safe ramekins or silicone muffin cups generously with butter or nonstick spray.

Put Muffin Cups Filling:
Pour the mixture into the muffin tins, filling each to approximately two thirds of the way.
Fry the Muffins by Air:

  1. Make sure there is enough room for the muffin cups to breathe when you place them in the air fryer basket.
