Candied Orange Peels
Parts and pieces:
- The peels of two to three large oranges, thoroughly washed.
1 cup of sugar, plus additional sugar for coating - 1 fluid ounce of water
- (Optional) one teaspoon of vanilla extract
- Cinnamon or cardamom, to taste (this is optional but adds a little extra flavour).

Getting the Peels Ready:
- Peel the oranges and cut them into thin strips that are approximately a quarter of an inch broad. Ensure that any excess pith, which is the white component of the peel, is removed if it is excessively thick, since this can cause the peels to become bitter.
Make the Peels Boil:
- After bringing the peels to a boil in a kettle of water, allow them to cook for a period of five minutes. It is necessary to drain and carry out this process once again. This assists in reducing the bitterness that is caused by the peels.
Produce the Syrup by:
- Put one cup of sugar and one cup of water into the same saucepan and mix them together. The sugar should be brought to a boil until it dissolves, which will result in the formation of a simple syrup. If using spices or vanilla, add them now.
To prepare the peels:
- The orange peels should be added to the syrup. Stirring the mixture occasionally, simmer on low heat for around forty-five minutes to one hour. In the process of absorbing the syrup, the peels will show a transparent appearance.
The Peels Should Be Dried:
- After the peels have been removed from the syrup, they should be placed on a cooling rack or on parchment paper and let to dry for four to six hours or overnight.
Add Sugar to the Coat:
- Sugar should be used to coat the candied peels after they have been dried. They should be kept in a container that is airtight.
