Fresh Avocado Tomato Bruschetta
Ingredients:
1 French baguette, sliced into 1/2-inch thick slices
2 ripe avocados, diced
2 cups cherry tomatoes, quartered
1/4 cup red onion, finely chopped
2 cloves garlic, minced
2 tbsp fresh basil, chopped
2 tbsp olive oil, plus more for brushing
1 tbsp balsamic vinegar
Salt and pepper, to taste
Fresh basil leaves, for garnish (optional)
Instructions:
Prepare the Baguette: Preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil. Toast in the oven for 5-7 minutes, or until golden and crispy. Remove from the oven and set aside to cool slightly.
Prepare the Topping: In a medium bowl, combine the diced avocados, quartered cherry tomatoes, finely chopped red onion, minced garlic, and chopped fresh basil. Drizzle with the olive oil and balsamic vinegar. Season with salt and pepper to taste. Gently toss to combine, being careful not to mash the avocados.
Assemble the Bruschetta: Spoon the avocado and tomato mixture onto each toasted baguette slice. Make sure each slice is generously topped.
Garnish and Serve: Garnish with additional fresh basil leaves, if desired. Serve immediately.
