Ingredients:
• 3 – 4 pound chuck roast
• 1 tablespoon olive oil
• 1 onion, finely diced🧅
• 6 garlic cloves, minced🧄
• 1 1/2 cups red wine🍷
• 1 cup chicken broth
• 2 sprigs each fresh rosemary and thyme
• 5 – 6 carrots🥕
• 2 pounds potatoes🥔

Instructions:
1️⃣ Preheat your oven to 350˚F and heat a large Dutch oven to medium-high heat.
2️⃣ Season the chuck roast generously with salt and pepper.
3️⃣ Add olive oil to the hot pan and sear the beef on both sides until golden brown. Remove the roast and set aside.
