Apple Cream Cake

- 60g (4 tablespoons) 40 grams sugar
- (4 teaspoons) corn flour
- 250ml (1 cup) leech
- Two tablespoons lemon juice
- 30 grams—1.5 tablespoons. mantequilla
Cake Ingredients:
- 2 apples, one diced tiny and one thinly sliced.
- 2 eggs, 1 tsp sugar
- A little salt 8g
- (1 tsp) vanilla-flavored sugar 120g (0.6 cup)
- 1/2 cup sugar
- 1/2 cup vegetable oil
- 130ml Milk heated
- 280g (1.75 cups). 16g flour 2-tsp baking powder
- 50 grams raisins
- 1 yellow egg portion
- Two tablespoons milk
- Optional powdered sugar for topping
PREPARATION:
- Make Cream: Mix 1 egg, a little salt, 8g vanilla sugar, and 60g sugar in a pot.
- Add 40g corn flour and 250ml milk. Ensure lump-free mixing.
- Stir constantly over medium heat until the mixture thickens.
- Off the heat, whisk in 2 tablespoons lemon juice and 30 grams butter until thoroughly combined.
- Avoid skin formation by covering the surface with plastic wrap. Let it cool fully.
Make cake batter.
- Pre-heat your oven to 180℃ (356℉) before use.
- Parchment a 24cm baking pan.
- Mix 2 eggs with salt in a large bowl.
- Add 120 grams of sugar and 8 grams of vanilla sugar and beat until light and fluffy.
- Stir well as you slowly add 100ml vegetable oil and 130ml warm milk.
- Gently whisk 280g flour and 16g baking powder into the mixture until homogenous.
- Carefully add diced apples and 50 grams raisins.
- Bake the cake: Pour half the mixture into the baking pan.
- Spread chilled cream evenly over mixture.
- Cover the cream equally with the remaining batter.
- Top the mixture with thin apple slices.
Prepare egg wash.
- Mix 1 egg yolk and 2 tablespoons milk in a small bowl.
- Egg-wash the cake’s apple slices.
- Bake the Cake: Place the cake in a preheated oven for 45 minutes or until a toothpick inserted in the middle comes out clean.
- After cooling in the pan, transfer the cake to a wire rack to finish cooling.
- You can sprinkle powdered sugar on top before serving.
- Cut and enjoy!
