A tasty and cosy recipe that’s ideal for breakfast, lunch, or even a quick supper is cheesy potato skillet. It is prepared using potatoes, cheese, and often an assortment of herbs and veggies. To help you get started, consider this easy recipe:
Ingredients:
- 4 medium potatoes (russet or Yukon Gold), peeled and diced
- 1 cup shredded cheddar cheese (or cheese of your choice)
- 1 small onion, diced
- 1 bell pepper (any color), diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and black pepper to taste
- 2-3 green onions, chopped (for garnish, optional)
- Fresh parsley or cilantro (for garnish, optional)
Instructions:
- Warm up the pan: Place a large pan over medium heat with the olive oil.
Cook the Potatoes: Fill the pan with cubed potatoes. Cook for 15 to 20 minutes, stirring often, or until they begin to turn brown and soften. You may put a lid on the skillet and cook them for a few minutes if you’d like. - Add Vegetables: Fill the pan with the chopped onion and bell pepper.
