Smothered Chicken with Mushrooms
Components:
Regarding the chicken:
- Four skinless and boneless chicken breasts
- To taste, add salt and pepper.
- Two tsp olive oil
- one tsp powdered garlic
- One tsp powdered onion
Regarding the sauce made with mushrooms:
- One medium onion, cut into slices
- Eight ounces of chopped mushrooms (buttons or cremini)
- two minced garlic cloves
- One cup of chicken broth
- 1/2 cup heavy cream (or cream cheese)
- One tablespoon of fresh thyme or one teaspoon of dried thyme
- One tsp of Worcestershire sauce
- To taste, add salt and pepper.
- Chopped fresh parsley (for garnish)
Guidelines:
- Season the Chicken: Use onion, garlic, and pepper powders to season the chicken breasts.
- To sear the chicken, place a large skillet over medium-high heat with the olive oil. When the chicken breasts are golden brown and well cooked, grill them for five to seven minutes on each side. Take out and place aside from the skillet.
- Sauté the Vegetables: Place the cut onion and mushrooms in the same skillet. Simmer them for five to seven minutes, or until they become tender and start to turn golden. After a minute, add the minced garlic and continue to sauté.
- To make the sauce, add the chicken broth and scrape off any brown remains in the skillet. Add the Worcestershire sauce, thyme, and heavy cream; season with salt and pepper. Bring to a simmer and cook, stirring, for three to five minutes, or until the sauce slightly thickens.
- Mix: Transfer the browned chicken back into the skillet and drizzle the mushroom sauce on top. To ensure the chicken is thoroughly heated and the flavors have time to blend, cover and simmer for a further five minutes.
- Serve: Before serving, sprinkle some fresh parsley over top. Savor it with mashed potatoes, rice, or your preferred side dish!
