Savory Hand Pies Recipe
Components:
Regarding the Dough:
- two and a half cups all-purpose flour
- One tsp salt
- One cup of chilled, diced unsalted butter
- Half a cup of icy water
- One egg for the egg wash
Regarding the Filling:
- One tablespoon of olive oil
- Half a pound of ground beef, sausage, or chicken (vegetarian option: substitute spinach and mushrooms)
- One little onion, diced finely
- two minced garlic cloves
- Grated cheese, half a cup (feta, mozzarella, or cheddar)
- One tspn dried oregano or thyme
- To taste, add salt and pepper.
- Optional: 1/4 cup cream cheese or tomato sauce to make the filling creamier
Guidelines:
Prepare the Dough:
- Mix the flour and salt together in a big bowl.
- Once the butter is added, cube it and use your fingers or a pastry cutter to work it into the flour until it resembles coarse crumbs.
- Add the ice water little by little and stir until the dough begins to come together. One tablespoon at a time, add a bit extra water if it’s too dry.
- The dough should be rolled into a ball, covered with plastic wrap, and chilled for at least half an hour.
Get the Filling Ready:
- In a skillet over medium heat, warm the olive oil. Add the garlic and onions and sauté for two to three minutes, or until softened.
- Once added, sauté the ground beef or veggies, breaking them up as they cook, until they are browned and well cooked. Add salt, pepper, and herbs (oregano or thyme) for seasoning.
- Take off the heat and add the shredded cheese. To make a creamy, savory filling, mix in the cream cheese or tomato sauce now if using.
- Allow filling to cool a little.
Put the Hand Pies Together:
- Adjust the oven temperature to 375°F (190°C) and place parchment paper on a baking pan.
- Using a floured surface, roll out the dough to a thickness of about 1/8 inch. Cut the dough into circles using a glass or a circular cutter that is about 4-5 inches in diameter.
- Put one or two tablespoons of the filling in the middle of each circle of dough. To form a half-moon, fold the dough over and press the edges together to seal.
- To make a tight seal, pinch the edges using a fork. Make a little incision on the top of every hand pie to allow steam to release.
Prepare the Hand Pies by Baking:
- To make an egg wash, beat the egg with a tablespoon of water. To give the hand pies a glossy, golden finish, brush the tops with the egg wash.
- Bake the hand pies for 25 to 30 minutes, or until they are crispy and golden brown.
Serve:
- Before serving, allow the hand pies to cool somewhat. Savor them warm, either by themselves or with a ranch or marinara dipping sauce.

- Unbaked hand pies can be frozen and baked straight from the freezer; just give them an extra five to seven minutes.
