Balsamic Soy Roasted Garlic Mushrooms
Components:
- One pound (450 grams) of washed and trimmed cremini or button mushrooms
- 3 minced garlic cloves
- Three teaspoons of olive oil
- Half a tsp balsamic vinegar
- One spoonful of soy sauce
- 1 teaspoon dried thyme, or 1 tablespoon fresh thyme leaves
- To taste, add salt and pepper.
- One tablespoon of finely chopped fresh parsley (optional garnish)
Guidelines:
Warm up the oven:
- Set oven temperature to 400°F, or 200°C. Cover a baking sheet with foil or parchment paper.
Get the mushrooms ready:
- Mix the olive oil, soy sauce, balsamic vinegar, minced garlic, and thyme in a big bowl. Add a dash of pepper and salt for seasoning.
- When the mushrooms are thoroughly covered with the mixture, add them to the bowl and toss again.
Let the mushrooms roast.
- Arrange the mushrooms on the baking sheet that has been preheated in a single layer.
- Roast the mushrooms for 20 to 25 minutes in a preheated oven, turning them halfway through, or until they are soft and browned. The mushrooms will be coated with the more concentrated and reduced balsamic soy glaze.
Serve:
- After roasting, move the mushrooms to a platter for serving. If preferred, garnish with fresh parsley and serve warm.

- Choose your mushrooms carefully. You can use portions of Portobello, cremini, or button mushrooms, which are even larger.
- Marinate Time: Before roasting, let the mushrooms sit in the balsamic soy sauce for 15 to 20 minutes to add even more flavor.
