Mango Habanero Aguachiles
Components:
Regarding the Marinade:
- half a cup of lime juice, fresh
- One or two habanero chilies, seeded and chopped finely (modify to taste)
- 1/4 cup finely chopped cilantro
- One tsp salt
- One teaspoon of optional sugar
Regarding the Aguachiles:
- One pound (450g) of peeled and deveined shrimp
- One ripe mango, chopped
- One cucumber, cut thinly
- Half a red onion, cut thinly
- One sliced avocado
- An additional cilantro garnish
Guidelines:
Get the marinade ready:
- Mix the lime juice, chopped habanero, cilantro, sugar, and salt thoroughly in a bowl.
Prepare the shrimp by marinating them.
- Transfer the shrimp to a shallow dish and cover them with the marinade. Ensure the shrimp are fully submerged. For about half an hour, or until the shrimp are opaque and the lime juice has “cooked” them, cover and chill.
Mix the ingredients together:
- In a large bowl, add the marinated shrimp, diced mango, cucumber, and red onion. Gently toss to mix.
Serve:
- Arrange the aguachiles on individual serving dishes. Top with avocado slices and garnish with extra cilantro.
