METHOD:
Get the sweet potato ready:
Using a grater, peel and shred the sweet potato.
Transfer the sweet potato shreds into a large mixing basin.

Combine the ingredients:
Toss in the fried bacon pieces (if using), finely chopped green onions, and grated Parmesan cheese (or shredded mozzarella) in the bowl with the shredded sweet potato.
Stir in the beaten egg, salt, pepper, brown sugar (if using), dried oregano, garlic powder, and all-purpose flour (or almond flour).
Stir everything until well mixed.
Create the Fritters:
Form the mixture into tiny patties with your hands, pushing down hard so that they stay together.
Warm up the oil:
In a big skillet, heat up a lot of oil over medium-high heat.
