Blood Sugar Friendly Zucchini Fritters
Ingredients
- 2 medium zucchinis, grated
- 1/4 teaspoon salt (to draw out moisture)
- 1/4 cup almond flour or oat flour
- 1/4 cup grated Parmesan cheese (optional)
- 1 large egg
- 2 cloves garlic, minced
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika (optional)
- 2 tablespoons olive oil (for frying)
- 2 tablespoons chopped fresh parsley (optional, for garnish)

Guidelines
- Prepare the zucchini by grating it and putting it in a strainer. To remove extra moisture, sprinkle them with salt and let them for approximately ten minutes.
- After ten minutes, press out as much water from the zucchini as you can using a fresh kitchen towel or cheesecloth.
- Combine Ingredients: Grated zucchini, almond flour, egg, Parmesan cheese (if used), minced garlic, oregano, black pepper, and paprika should all be combined in a big bowl. Blend until well blended.
- Form Fritters: Using a little amount of ingredients, form each into a patty that is approximately 2 inches in diameter. Proceed with the leftover blend.
- Prepare Fritters:
In a big skillet, warm the olive oil over medium heat.
After adding the fritters to the pan, fry them for 3–4 minutes on each side, or until they are crispy and golden brown. - Transfer the fritters from the pan to a platter covered with paper towels to absorb any remaining oil before serving.
- If preferred, garnish with finely chopped parsley and serve warm.
