Ingredients:
- Two chicken breasts
- One pound of cleaned asparagus
- one cup of thawed spinach and artichoke dip
- Two tsp olive oil
- One tsp of Kosher salt
- One-half teaspoon of black pepper
- Optional: ½ teaspoon of garlic powder
- Optional: ½ teaspoon of onion powder
Guidelines:
- Set the oven temperature to 375°F, or 190°C.
- Make a pocket in each chicken breast by cutting transverse from one side to almost the other side with a sharp knife, taking care not to cut all the way through.
- Apply melted butter or olive oil to the chicken breasts. Add a little salt, pepper, onion powder, and garlic powder on each side.
- Spoon heaping spoonfuls of Trader Joe’s Artichoke Spinach Dip into the chicken breast pockets. If using cheese, either blend it into the dip before stuffing it, or sprinkle it on top.
- Place two to three asparagus spears inside each filled chicken breast.
- Optional: To make sure the stuffing stays inside, fasten the open ends of the chicken breasts with toothpicks.
Brush the outside of each stuffed chicken breast with olive oil. - The air fryer basket should be heated before adding the filled chicken breasts. Cook for 20 to 25 minutes, rotating them halfway through, or until the outside is crispy and golden brown and the inside of the chicken reaches an internal temperature of 165°F (74°C).
Recipe Variations:
This is a very basic recipe that can be altered in many ways. These are some of my most preferred variations on spinach filled chicken.
Create your own dip. Make your own cream cheese spinach dip if you have a recipe.
stuffed chicken with spice. Diced jalapenos should be added to the filling.
Chicken Thighs Stuffed. Instead of stuffing and slicing breasts, use chicken thighs.
Extra Sprinkling of Seasoning. If you would rather not have Parmesan cheese on the exterior, you can brush the outside with any herbs or spices before putting the slices in the skillet.
