AIR FRYER CAULIFLOWER PANCAKES

Ingredients
- Cut 1 medium cauliflower into florets
- 1/2 cup shredded cheddar, mozzarella, or mix

Instructions
1. Prepare cauliflower:
- Steam Cauliflower: Steam cauliflower florets for 10 minutes to tenderize. They can also be microwaved for 8 minutes in a microwave-safe dish with water.
- Cool and Rice: Process steamed cauliflower when it cools. Pulse cauliflower into rice or crumbs. Without a food processor, chop it finely with a knife.
- Riced cauliflower should be squeezed out of excess moisture in a clean kitchen towel or cheesecloth. This step is essential for crispy pancakes.
2. Make pancake batter:
- Mix Ingredients: Mix riced cauliflower, shredded cheese, Parmesan cheese, flour, eggs, chopped garlic, onion powder, dried oregano, salt, and black pepper in a big bowl. Blend well.

3. Air-fry pancakes:
