Air Fryer Cauliflower Tacos
Using your air fryer is essential if you want extremely crispy “fried” cauliflower. Essentially, this dish is our favourite fish tacos made vegan. To ensure that the panko bread crumbs adhere to the florets, you must first prepare a slurry of flour and milk for the coating. Although it might be a bit laborious, you can bread the next batch of cauliflower while the previous batch cooks in the air fryer.
Ingredients:
Regarding the slaw
- One cup of red cabbage, thinly sliced
- Diced half a tiny red onion
- One minced jalapeño
- one minced garlic clove
- one lime’s juice
- Twice as much apple cider vinegar
FOR THE CAULIFLOWER
- , pinch some kosher salt.
- Half a cup of all-purpose flour
- One teaspoon of chilli powder
- One teaspoon of cumin
- A half-tsp of garlic powder
- Half a teaspoon of cayenne
- salt that is kosher
- freshly ground black pepper
- 1 1/2 cups non-dairy milk, such as almond milk
- Panko bread crumbs, 1 1/2 cups
- Cut one medium head of cauliflower into bite-sized pieces.
Cooking mist
FOR SERVING
- 1/2 c. vegan mayonnaise
- Tbsp. sriracha
- 1 tsp. maple syrup
- Corn tortillas
- Sliced avocado
- Freshly chopped cilantro
- Lime wedges
Directions:
- Mix the ingredients for the slaw in a medium-sized bowl. While preparing the tacos, let it sit, stirring periodically.
- Mix the flour and spices in a medium-sized bowl, then generously season with salt and pepper. Stir in almond milk after adding it. Though thick, the mixture should be manageable for dipping cauliflower into. Adjust with a bit more milk if necessary. Place panko into small bowl.
- Dip florets into milk mixture, wiping any excess off, then toss in panko.
- Coat the cauliflower and set it in the air fryer basket in batches, then mist it with cooking spray. Bake at 400° for 15 minutes, pausing occasionally to stir and mist with more cooking spray.
- Combine vegan mayonnaise, sriracha, and maple syrup in a small bowl.
- Put the tacos together: Place cooked cauliflower, avocado, pickled slaw, cilantro, and a sriracha mayo drizzle on top of a tortilla. Accompany with slices of lime.
