Nothing compares to a warm, freshly prepared muffin of coffee. It’s a delicious and simple meal that can be made for breakfast, a snack, or dinner and has the trademark ground cinnamon coating on top.

I adore it. There has never been a more enjoyable way to make muffins than using an air fryer.

REASON FOR THE NAME, COFFEE Muffins?

Wikipedia claims that the coffee muffins only get their name since they are usually served with coffee in the morning!

Components

Muffins:

  1. two cups of flour
  2. one and a half cups sugar
  3. two tsp powdered baking
  4. Half a teaspoon of salt
  5. Half a cup of melted butter
  6. three-quarters cup milk
  7. One tsp vanilla
  8. One egg

Finishing:

  1. one-fourth cup flour
  2. two and a third cups sugar
  3. two tsp finely ground cinnamon
  4. 1/4 cup of butter, melted

Guidelines

  • Remove the paper liners from about 8 silicone muffin cups and set them aside.
  • Turn the air fryer on to 400°F, or 204°C.
  • Mix all of the dry ingredients for the muffin batter first, and then add the wet components. Blend thoroughly.
  • Fill almost to the brim the silicone cups with the batter using a spoon.
  • Bake for four minutes at 400°F (204°C). Next, reduce the heat to 325°F (163°C) while keeping the air fryer basket covered. Bake for an additional 11 to 13 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.
  • Take out of the oven and allow it cool for five minutes in the silicone cups. Before serving, move the dish to a wire rack and allow it cool fully. For up to four days**, keep at room temperature in an airtight container.
  • In a small bowl, combine all the ingredients for the topping. After thoroughly mixing, sprinkle over the muffins.
