Air fryer Corn Fritters
Perfect as a snack or side dish for any event, these golden, crispy fritters are loaded with whole kernel corn, cheese and fresh parsley.
Ingrediants
- 1 can whole kernel corn
- 2 eggs
- Salt & pepper, to taste
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 cup shredded cheese
- 1 pat butter
- 2 tbsp oil
- 1/4 cup chopped parsley
Instructions
- Prepare the corn by draining it well and throwing away the moisture.
Combine the Batter: Using a bowl, thoroughly beat eggs, salt, and pepper. - Mix in the flour and baking powder and mix to produce a smooth batter.\
- Add Corn and Cheese: Gently stir in the cheese shreds and drained corn until well combined.
- To preheat the air fryer, set it to 350°F for three minutes and coat it with olive oil.
- The Fritters are air-fried: Place the corn mixture into the air fryer by spoonfuls. Fry until one side is golden brown, then turn and continue cooking until the other side is crispy and golden.
- After cooking, remove the fritters and serve them hot, topped with minced parsley. Drain and serve.
