Enjoy a tasty and simple fry-free crispy chicken supper with our Crispy Cheddar Chicken. It’s cooked in the air fryer with a crispy, golden crust after being coated with cheddar cheese and Ritz crackers. Serve with a rich sauce for a filling supper!
Ingredients
- 2 lbs chicken tenders or 4 large chicken breasts (cut into tenders if using breasts)
- 2 sleeves ritz crackers
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/2 cup whole milk (or 2%)
- 1 cup cheddar cheese, grated
- 1 tsp dried parsley
For the Sauce:
- 10 oz can cream of chicken soup
- 2 tbsp sour cream
- 2 tbsp butter
Method:
- Crush the Ritz crackers into tiny crumbs to prepare the coatings. Transfer the milk, cheese that has been grated, and cracker crumbs to several shallow plates. Stir the cracker crumbs with the salt and pepper.
- Coat the Chicken: Press the grated cheese onto each piece of chicken by dipping it first in milk and then in cheese. Then, cover the chicken with the cracker crumbs, being sure to press them on firmly.
- Air-Fry the Chicken: Start the air fryer at 375°F, or 190°C. Cooking spray should be used sparingly on the air fryer basket. Arrange the breaded chicken pieces in the basket in a single layer. After 10 minutes of air cooking, turn the chicken over and continue air cooking it for a further 8 to 10 minutes, or until it is crispy and golden brown.
- Make the Sauce: In a medium saucepan, mix the butter, sour cream, and cream of chicken soup while the chicken cooks. Mix well over medium-high heat until sauce is smooth and thoroughly cooked.
- Serve: Drizzle the creamy sauce over the crispy chicken or serve it on the side so that guests may dig into it. If desired, garnish with dried parsley.
