Air Fryer Potatoes and Sausage with Carrots + Broccoli
This delicious one-pot air fryer potatoes and sausage with carrots and broccoli will please the whole family! Serve lunch or dinner! Crispy exterior, tender within, savoury and pleasant, the veggies and sausage are wonderful. Air-fried potatoes and sausage are perfect for busy weekday/weekend lunches and dinners you don’t want to cook. This dish is kid-safe. The dinner arrives swiftly and is complete—can you beat that? Ingredients
- 3 large potatoes (approximately 3 cups, peeled and chopped in 1-inch pieces)
- 2 medium-large Carrots
- 1 tiny broccoli head (2 cups)
- 2 uncooked mild Italian banger links (use completely cooked banger). Add thoroughly cooked banger last.
- I used a tablespoon and a half of avocado oil.
- 2–1 tbsp date syrup
- 1 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 teaspoon dried thyme
- ½ tsp Maggi (or Knorr) seasoning
- ½ Natural Cajun seasoning
- 1/2 teaspoon salt 1/2 teaspoon black pepper.
- To season broccoli, add pepper, salt, Cajun flavour, and dry thyme.
Instructions
- Clean and chop all vegetables and sausage. I cut potatoes to 1–2 inches and preferred cubes. Peel the carrots first. I cut the roots and tops. Then I cut them into 2-inch chunks not too small or too huge.
- Finally, I cut the broccoli by separating the stiff stalk from the edible florets. If a floret is too huge, I half it! Cut the sausage casing with kitchen scissors on a cutting board or solid surface (a fully cooked sausage won’t need this).
- Then slice/cut into 1-inch pieces with a knife. You can definitely cut them more or less.
- Season the potatoes and carrots in a large basin, omitting salt and date syrup. Mix in 1 tablespoon avocado oil. Taste and add salt to taste. Always apply salt last if your seasonings involve sodium.
- Preheat air fryer at 350, add seasoned potatoes and carrots to basket. Gently place the cut sausages in the air fryer basket with a spoon or spatula. Turn midway during 15 minutes of air-frying.
- Season the broccoli as the air fryer cooks the potatoes, carrots and sausage. Season with salt, black pepper, cajun seasoning, dry thyme, date syrup, and avocado oil. Mix thoroughly and reserve.
- Make sure the seasoned broccoli is uniformly distributed after 15 minutes. A little avocado oil spray if needed. Air-fry for 8 more minutes. Taste/adjust flavors and turn/shake halfway.
- This air fryer supper of potatoes, sausage, carrots and broccoli is done when the outside is crisp and the inside is tender! Serve warm with or without sauce—my kids adore ketchup, but we use a little homemade pumpkin seed salad dressing!
