Components
- One pound (450g) of bite-sized chunks of stew or chuck beef

- Beef broth, four cups (960ml).
- Water, two cups (480ml)
- Two tsp soy sauce
- One tablespoon of oyster sauce (optional; adds added flavour depth)
- One tablespoon of optional hoisin sauce
- Two to three star anise (optional; adds a bit of flavour)
- Two to three whole cloves (optional)
- Cut into two medium carrots
- 2 cut celery stalks
- One cup (150g) of sliced mushrooms (buttocks or shiitake work nicely)
- 8 ounces (225 grams) of noodles—you can use rice noodles or egg noodles.
- Baby spinach or other leafy greens, two cups (60g) (optional)
- Two to three chopped green onions (for garnish)
- Finely chopped fresh cilantro (for garnish)

Guidelines
First, brown the beef.
- Heat the oil: Place the vegetable oil in a big pot or Dutch oven and heat it over medium-high heat.
