Best Chicken Salad
Components:
- Two cups of cooked chicken, chopped or shredded (rotisserie chicken works excellent for this).
- one-half cup mayonnaise
- 1/4 cup Greek yogurt; add more if you want it creamy.
- One spoonful of mustard dijon
- One tablespoon of lemon juice
- 1/2 cup finely chopped celery
- 1/4 cup finely chopped red onion
- Half a cup of grapes (you may use green or red ones)
- 1/4 cup of toasted nuts, such as walnuts or pecans, are optional.
- To taste, add salt and pepper.
- Fresh herbs (parsley, dill, etc. are optional).
Guidelines:
- Mix the Base: Using a large bowl, thoroughly combine together the mayonnaise, Greek yogurt (if using), Dijon mustard, and lemon juice.
- Add the chicken and stir until it is well coated in the dressing.
- Stir in Fruits and Veggies: Stir in the nuts (if using), celery, and red onion. Fold everything together gently.
- Season: To taste, add salt and pepper. Add a little fresh herb mixture for flavor, if preferred.
- Chill: To ensure that the flavors merge, cover and chill for at least half an hour.
- Serve: Snack on some crackers, a sandwich, or a bed of greens!
Advice:
- Feel free to alter by adding components for a different twist, such as sliced apples, avocado, or even a pinch of curry spice!
- Cut back on the mayonnaise and up the Greek yogurt for a lighter version.
