DELICIOUS FRIED POTATOES AND ONIONS Delicious Fried Potatoes and Onions are a delicious side dish that will quickly become a family favourite. They will elevate your meals.

INGREDIENTS FOR DELICIOUS FRIED POTATOES AND ONIONS

  • Enough peanut oil to cover the whole pan’s bottom
  • Two tsp unsalted butter (sweet cream)
  • One pound of Idaho russet potatoes or red potatoes
  • Seasoned water (SALTED)
  • ½ Vidalia or other medium-sized sweet onion
  • To taste, add salt and pepper (PREFERRED TASTE).
  • Add some paprika and fresh basil as garnish.

INSTRUCTIONS FOR DELICIOUS FRIED POTATOES AND ONIONS

  • Set a hefty 9-inch cast iron pan over medium heat (my electric stove; medium is just a little above medium).
  • Add a little oil to the skillet and then the butter. Heat this until the oil shimmers on the surface and is not smoking; if it begins to smoke, turn off the heat and allow it to cool until it shimmers once more.
  • Chop the potatoes into uniformly sized pieces, either as chips or cubes, depending on your preference.
  • As you chop, drop into 4 cups of water with 2 tablespoons of salted water.
  • Chop the onion more coarsely than the potato.
  • After five minutes, use paper towels to thoroughly drain and dry the potato.
  • Add the onion and potato to the simmering oil when it’s ready. Don’t pack the potatoes in too closely. If there’s not enough space for them to lie side by side, fry a portion of them, take them out to drain on a paper towel, then cook the remaining ones.
  • Cook for about 4 minutes on one side, then turn and continue cooking for an additional 2–4 minutes.
  • Using paper towels, drain. Add salt and pepper right away after removing from the oil.
  • Serve hot, garnished.
