Traditional Recipe for Whole Roasted Cauliflower
Ingredients:
- One huge cauliflower head
- one-fourth cup olive oil
- Two tablespoons of just squeezed lemon juice
- four minced garlic cloves
- One teaspoon of paprika
- 1/2 tsp of turmeric powder
- To taste, add salt and pepper.
- chopped cilantro or parsley that is fresh for garnish
Directions:
- Turn the oven on to 400°F, or 200°C. Trim the stem of the cauliflower so that it sits flat and remove any leaves.
- To make a marinade, whisk together olive oil, lemon juice, garlic, paprika, and turmeric. Add pepper and salt for seasoning.
- Transfer the cauliflower to a baking dish and evenly coat it with marinade.
- Cover with foil and roast for 30 minutes, then uncover and roast for another 20-30 minutes until golden brown.
- After letting it rest, top with herbs and serve.
Variations & Tips:
- For a spicy twist, add cayenne or red pepper flakes.
- A smokey flavour is added with ground cumin or smoked paprika.
- You can add capers to give it a salty flavour.
