Quick Italian Cream Cake
Components
Regarding the Cake:
- a quarter cup all-purpose flour
- ½ teaspoon baking powder
- One-half teaspoon baking soda
- Half a teaspoon of salt
- ½ cup room temperature unsalted butter
- 1 cup of sugar, granulated
- Two big eggs
- 1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon vinegar or lemon juice, allowed to stand for 5 minutes)
- One teaspoon vanilla extract
- One cup of shredded coconut with sweetness
- ½ cup of pecans, chopped
For the frosting made with cream cheese:
- 8 ounces of softened cream cheese
- ½ cup softened unsalted butter
- Four cups of powdered sugar
- One teaspoon vanilla extract
Guidelines
1. Heat and arrange:
- Set the oven temperature to 350°F (175°C).
- Two 9-inch round cake pans (or one 9×13-inch pan) should be greased and floured.
Step 2: Prepare the Cake Batter:
- Mix the flour, baking soda, baking powder, and salt in a medium-sized bowl.
- Beat the butter and sugar together in a large bowl until frothy and light.
- One egg at a time, adding and beating thoroughly after each addition.
- Add the vanilla extract and stir.
- In three additions, gradually add the flour mixture to the butter mixture, alternating with the buttermilk. The flour mixture should be mixed in last, mixing only until incorporated.
- Stir in the chopped pecans and shredded coconut.
3. Cook:
- Pour all of the batter into the 9×13-inch pan, or divide it equally among the prepared cake pans.
- When a toothpick put into the center comes out clean, bake for 25 to 30 minutes.
- After allowing the cakes to cool in the pans for roughly ten minutes, move them to a wire rack to finish cooling.
4. Prepare the frosting:
- Cream cheese and butter should be combined and beaten until smooth and creamy in a big basin.
- Add the powdered sugar gradually and beat on low speed just until incorporated.
- Add vanilla extract and stir until smooth.
5. Apply the cake frosting:
- If you’re using round pans, make sure the cakes are level. Spread a layer of frosting over the first layer that is on a serving plate or cake stand, and then set the second layer on top.
- Apply the cream cheese icing to the cake’s sides and top.
- If preferred, garnish with more shredded coconut or pecans.
