The Best Potato Bread
Ingredients
- 1 cup of mashed potatoes (from roughly 2 medium-sized potatoes)
- 1/4 cup unsalted butter, melted
- 1 cup warm milk (110°F/45°C)
- 2 tablespoons honey or sugar
- 2 1/4 teaspoons of active dry yeast (equivalent to one packet)
- 4 cups bread flour
- 1 1/2 teaspoons salt
Guidelines
Get the mashed potatoes ready.
- Cut two medium potatoes into cubes.
- In a kettle of water, boil the potatoes for approximately 15 minutes, or until they are soft.
- Once the potatoes are drained, mash them smooth. One cup of mashed potatoes should be measured out and let to cool somewhat.
Get the Yeast Going
- Whisk the heated milk and honey (or sugar) together in a small bowl. Until the honey dissolves, stir.
After scattering the active dry yeast over the milk mixture, let it stand for five to ten minutes, or until frothy.
Combine the Dough
- Melted butter, yeast mixture, and mashed potatoes should all be combined in a big mixing dish.
- To the basin, add the salt and bread flour.
- Combine the ingredients and stir until a dough forms. You may mix by hand with a wooden spoon or with a stand mixer that has a dough hook attached.
Work up the Dough.
- After transferring the dough to a floured surface, knead it for ten minutes or more, or until it becomes elastic and smooth.
- Add a tablespoon at a time of more flour if the dough is too sticky until the desired consistency is reached.
First Light
- Spoon the dough into a basin that has been gently greased, being sure to cover both sides.
- Place a moist towel or plastic wrap over the bowl and let it rise in a warm location until it has doubled in size, approximately one to two hours.
Form the Bread
- The rising dough should be pounded down to remove any air bubbles.
- After transferring the dough to a surface dusted with flour, form it into a loaf.
- Put the formed dough into a 9-by-5-inch loaf pan that has been oiled.
Second Ascent
- After the dough has doubled in size, cover the loaf pan with a moist towel or plastic wrap and let it rise once more in a warm location for 30 to 45 minutes.
Prepare the Bread
- Turn the oven on to 375°F, or 190°C.
- The bread should be baked for 30 to 35 minutes in a preheated oven, or until it sounds hollow when you tap it and has a golden brown top.
- For the last ten minutes of baking, you may loosely cover the bread with aluminum foil if the top is browning too rapidly.
Chill and Present
- After taking the bread out of the oven, allow it to cool for ten minutes or so in the pan.
Before slicing, turn the bread out onto a wire rack to cool fully.
