SMASHED ROASTED POTATOES
- Onion powder and little or baby potatoes, which have not been peeled are the ingredients.
- Grinding of Garlic
- Butter that has melted
- Oil of Olives
- A dash of salt and pepper
Technique:
- Prepare potatoes by washing and peeling them, then cooking them in a saucepan with water covering them until they are soft. After draining, wait until the mixture is cool enough to touch by hand.
- Bake at 220 degrees Celsius (425 degrees Fahrenheit).
- Prepare a baking dish that is shallow and line it with baking paper.
- When you place the potatoes on the baking paper, use a glass to crush them down. The thickness of the potatoes will determine how crunchy they will become; the thinner the potatoes, the more crunchier they will become.
- Apply a thin layer of melted butter to the tops, then sprinkle them with onion and garlic powder. Finally, spray a small amount of olive oil over them and season them with salt and pepper.
- Place the potatoes on the highest rack of the oven and roast them for thirty-five to forty minutes, or until they have a golden brown colour and crisp edges.
- In the moments before serving, garnish with freshly cut parsley.
