Regarding the Cake Base:
For the Cake Filling,
- 500 cocoa cookies
- One yolk
- One egg
- 60g cornflour and 150ml chilled milk
- 100g sugar, 25g powdered cocoa
- 250 milliliters of milk
- 50 grams of butter
- 50g of plums
Regarding the Ganache de Chocolate:
- 70 grams of dark chocolate
- 70 milliliters of cream (33%).

Guidelines:
- Cake Substance: Using a food processor or rolling pin enclosed in a plastic bag, finely crush the cocoa biscuits into crumbs. To make a crust, press the cookie crumbs into the bottom of a cake pan or springform pan.
- Cake Filling: Whisk the yolk, egg, cornstarch, and cold milk together until they are smooth in a saucepan.
Mix in the milk, sugar, and cocoa powder and whisk constantly over medium heat until the liquid thickens.
Take off the heat, - When the butter has melted and the mixture is smooth, add the plums and stir.
- Evenly distribute the filling over the cookie crust in the pan after pouring it on.
- Ganache with chocolate: Heat the cream in a microwave or on the stovetop until it’s heated through but not boiling.
- Transfer the heated cream onto the butter and dark chocolate in a heat-resistant basin. After a minute, give it a quick swirl to make it smooth.
Putting together: Evenly distribute the chocolate ganache over the cake filling as you pour it over. - The cake should be chilled for several hours or until it solidifies.
