Delicious Christmas Plum Cake Recipe

Components:
Regarding the Soak Mix:
- Dried fruits and nuts (dates, raisins, sultanas, cashew nuts, dried papaya pineapple bits, candied peel pieces, red glazed cherries, and dried cranberries) 600g (4 cups)
- Approximately two tablespoons of spices (cardamom powder, allspice, and cinnamon)
- Three tablespoons of brandy or rum;
- three tablespoons of golden syrup;
- two teaspoons of vanilla extract;
- one teaspoon of optional rose essence
- One teaspoon of optional lemon essence
Regarding the Cake
- 4 tablespoons (30 grams) Simple Flour: 90g, or ½ cup Sorghum – 100g / ½ cup Sugar: 110g, or ½ cup Three eggs and butter Two egg whites and two yolks

- – Baking pan – 240 ml measuring cup 20 by 20 centimeter square pan
Guidelines:
- Set the oven’s temperature to 160°C, or 320°F.
- 2. Within a huge Add all the nuts, spices, brandy or rum, golden syrup, vanilla extract, and optional essences to a bowl and mix well. After thoroughly mixing, let it soak for several hours or overnight.
- 3. Beat the butter and sugar in a another bowl until they are light and fluffy.
- 4. Add the egg yolks one at a time, thoroughly combining each time.
- 5. Stir in semolina and regular flour.
- 6. Gently incorporate the egg whites into the batter after beating them until firm peaks form.
- 7. Include the strawberry jam or jelly and the soaking fruit combination. Blend until thoroughly blended.
- 8. Spoon the mixture into a 20 x 20 cm square baking tray that has been lined and oiled.
- 9. Bake for 30 minutes at 160°C (320°F) in a preheated oven, then turn down the heat.
- Bake at 140°C (284°F) for a further 50–60 minutes. If necessary, cover with foil halfway through baking.
- 10. Allow the cake to cool fully before cutting it into slices and enjoying the festive flavor!
