Zucchini and Cheese Pancakes:
Enjoy golden brown zucchini pancakes, flecked with cheddar and chives, for breakfast, lunch, dinner, or as a snack. Seriously good eating and easy to make!
Ingredients:
- 2 zucchinis
- 3 chicken eggs
- Bunch of spring onions
- Bunch of dill
- 100g cheese
- 4 tbsp flour
- 1 tsp baking powder
- Salt and black pepper to taste
Instructions:
- Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel or paper towels.
- In a mixing bowl, beat the eggs and then add the grated zucchini, chopped spring onions, chopped dill, grated cheese, flour, baking powder, salt, and black pepper. Mix well until combined.
- Heat some oil in a skillet over medium heat.
- Spoon the zucchini mixture into the skillet, forming pancakes. Cook until golden brown on both sides, about 3-4 minutes per side.
- Once cooked, transfer the pancakes to a plate lined with paper towels to drain any excess oil.
Cucumber and Garlic Sauce:
Ingredients:
- 1 cucumber
- 4-5 tbsp sour cream
- 2 cloves of garlic, minced
- Salt to taste
Instructions:
- Peel and grate the cucumber. Squeeze out excess moisture using a clean kitchen towel or paper towels.
- In a bowl, mix together the grated cucumber, sour cream, minced garlic, and salt.
- Taste and adjust seasoning if necessary.
- Serve the zucchini and cheese pancakes hot with the cucumber and garlic sauce on the side. Enjoy your meal!
