Ingredients:

  1. 2 zucchinis
  2. 3 chicken eggs
  3. Bunch of spring onions
  4. Bunch of dill
  5. 100g cheese
  6. 4 tbsp flour
  7. 1 tsp baking powder
  8. Salt and black pepper to taste

Instructions:

  • Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel or paper towels.
  • In a mixing bowl, beat the eggs and then add the grated zucchini, chopped spring onions, chopped dill, grated cheese, flour, baking powder, salt, and black pepper. Mix well until combined.
  • Heat some oil in a skillet over medium heat.
  • Spoon the zucchini mixture into the skillet, forming pancakes. Cook until golden brown on both sides, about 3-4 minutes per side.
  • Once cooked, transfer the pancakes to a plate lined with paper towels to drain any excess oil.
