Cream Cheese Cranberry Loaf

INGREDIENTS

  1. 2 cups flour
  2. 2 cups cranberries, fresh or frozen
  3. 1 1/2 cups sugar
  4. 1cup 2 sticks unsalted butter, room temperature
  5. 18 oz. package cream cheese, room temperature
  6. 4 eggs, room temperature
  7. 1 1/2 teaspoon vanilla extract
  8. 1 1/2 teaspoons baking soda
  9. 1/2 teaspoon salt

Instructios:

  1. Set oven temperature to 350º F. Grease a loaf pan measuring 9 by 5 inches with butter or nonstick spray.
  2. In a large bowl, beat together butter, cream cheese, and sugar with an electric mixer. Beat in vanilla and eggs, one at a time.
  3. The baking soda, flour, and salt should be combined in a separate basin. After mixed, gradually stir the dry ingredients into the wet components. Make care to whisk everything until it’s well incorporated.
  4. Before you transfer the mixture into the baking dish that has been prepared, you should gently fold in the cranberries.
  5. It’s baking time! After placing your bread in the oven, bake it for 60 to 70 minutes. Once it’s done, insert a toothpick into the middle to confirm. You may take it out of the oven if it comes out clean. Remember to give it a good 15 minutes to simmer before serving
