It’s an easy approach to make a dinner fit for a celebration or just to enjoy a cosy supper at any time of year.

Ingredients:

  1. 1 boneless, skinless turkey breast (about 2-3 pounds)
  2. 1 cup fresh breadcrumbs
  3. 1/2 cup chopped onion
  4. 1/2 cup chopped celery
  5. 1/2 cup chopped mushrooms
  6. 2 cloves garlic, minced
  7. 1/4 cup chopped fresh parsley
  8. 1/4 cup grated Parmesan cheese
  9. 1/4 cup melted butter
  10. Salt and pepper to taste
  11. Olive oil spray

Directions:

  1. To prepare the stuffing, heat a small amount of olive oil in a skillet over medium heat. Add the garlic, mushrooms, celery, and onions and sauté until they are transparent and tender. Take it off the fire and let it to cool a little. The sautéed vegetables should be combined with breadcrumbs, parsley, Parmesan cheese, melted butter, salt, and pepper in a mixing bowl. Toss to blend well.
  2. Get the turkey breast ready: On a spotless surface, place the turkey breast flat. With a well-edged knife, gently butterfly the turkey breast by cutting it down one side in a horizontal motion, halting approximately half an inch from the other side, and then unfolding it like a book.
  3. Stuff the Turkey Breast: Leaving a thin border all the way around, evenly distribute the stuffing mixture over the opening turkey breast. Starting from one of the long sides, tightly roll the turkey breast around the stuffing. If needed, secure with kitchen twine.
  4. Preheat Air Fryer: Give your air fryer a five-minute warmup period at 375°F (190°C).
  5. Olive Oil Spray: To aid in browning and crispiness, lightly mist the exterior of the stuffed turkey breast with olive oil.
  6. Air Fry: Slide the stuffed turkey breast into the air fryer basket, seam side down. You might have to cook your food in batches depending on how big your air fryer is. Cook for approximately 30 to 35 minutes, or until a meat thermometer inserted into the flesh registers 165°F (75°C). Cook at 375°F (190°C).
  7. After it’s finished, take the filled turkey breast out of the air fryer and let it a good five minutes to rest before slicing. This makes the turkey juicier by allowing the juices to disperse. Thickly slice the filled turkey breast and serve it alongside your preferred side dishes.
