Air Fryer Mushrooms and Onions

The savory-sweet flavours in the caramelised onions are complemented by the rich umami of the mushrooms in this simple side dish. The flavours of the quickly roasted veggies are elevated above those of a typical side dish by tossing them with parsley, lemon zest, and thyme. Add some shaved pecorino or parmesan for a bit of indulgence.

Serve this side over your favourite air-fried protein, such as salmon or chicken, or on top of a grilled steak to turn it into a meal. Alternatively, you could serve them as pizza toppings, which would taste very good with ricotta or nutty gruyère. Alternatively, serve them as a topping for cereals with crunchy veggies like cucumber slices and your preferred bean (we like lentils, but any type of bean would work well too).

Ingredients:

  1. Two minced garlic cloves
  2. two tablespoons extra virgin olive oil
  3. For serving, add 1/4 tsp. of freshly grated lemon zest along with 4 tsp
  4. fresh lemon juice.
  5. One teaspoon of kosher salt
  6. Worcestershire sauce, 1 teaspoon
  7. One tiny yellow onion, cut in half and thinly sliced
  8. one pound of baby bella or button mushrooms halved and quartered if large
  9. 1 tablespoon freshly chopped parsley
  10. 1 tablespoon of newly plucked thyme

Directions:

Step 1:

Garlic, oil, lemon juice, salt, and Worcestershire sauce should all be combined in a large, heatproof bowl. When the mushrooms have absorbed all of the oil combination, add the onion and continue to toss (this should take around 30 seconds).
Step 2:

Spoon mushroom mixture into an air fryer basket in a single layer, working in batches if needed; set aside bowl. Simmer at 400° for 13 to 15 minutes, stirring occasionally to guarantee even cooking, or until the onions and mushrooms are soft and browned.

Step 3:

Place hot mushroom mixture back in bowl that was set aside. Add lemon zest, thyme, and parsley and toss.

Variations:

  • Garlic Parmesan Onions and Mushrooms: Before air-frying, toss the onions and mushrooms with minced garlic, grated Parmesan cheese, olive oil, salt, and pepper. As the Parmesan produces a crunchy, savoury crust, the garlic contributes depth of flavour.
    Onions & Mushrooms with a Balsamic Glaze:
  • Before air-frying, drizzle the onions and mushrooms with balsamic glaze. As it cooks, the balsamic vinegar caramelises, adding a sweet and tangy flavour that accentuates the earthiness of the onions and mushrooms.
  • Herb-Roasted Mushrooms and Onions: Toss the mushrooms and onions with a mixture of dry herbs, including oregano, thyme, and rosemary, then season with salt, pepper, and olive oil. The meal has a pleasant, herbaceous flavour that is enhanced by the aromatic herbs.
  • Onions with Spicy Chili-Lime Mushrooms:

    Before air-frying, toss the onions and mushrooms in a mixture of olive oil, salt, pepper, lime zest, and chilli powder. The meal gets a zesty edge from the combination of acidic lime and hot chilli.
    Oriental-Style Stir-Fry Onions with Mushrooms:
    Before air-frying, marinate the onions and mushrooms in a mixture of sesame oil, soy sauce, minced ginger, and garlic. Add some chopped green onions and sesame seeds as garnish for a tasty take on a traditional stir-fry.
