Air Fryer Stuffed Peppers (Picadillo Style)

Components

  1. Four big bell peppers of any hue
  2. One pound of either ground turkey or beef
  3. One large onion, diced finely
  4. Three minced garlic cloves,
  5. fourteen ounces of diced tomatoes,
  6. or two diced fresh tomatoes
  7. 1/4 cup finely chopped green olives
  8. one-fourth cup raisins
  9. Two teaspoons of ground cumin
  10. One teaspoon of dried oregano
  11. To taste, add salt and pepper.
  12. Half a cup of stock, either chicken or beef
  13. One tablespoon of tomato paste
  14. half a cup of white rice, cooked
  15. Use fresh parsley or cilantro as garnish.
  16. Extra toppings at your discretion: sour cream, cheese, and grated

Guidelines

  • After washing, trim the tops, and remove the seeds and membranes from the bell peppers. Put aside.
  • Use any leftover rice if you have any; if not, cook 1/4 cup uncooked rice per the directions on the package.
  • Cook the ground beef or turkey in a pan over medium heat, breaking it up as it browns.
  • Sauté the garlic and onions in the pan until they become transparent.
  • Add the oregano, cumin, salt, and pepper. Then add the chopped tomatoes, tomato paste, raisins, and green olives. Mix thoroughly.
  • After adding the stock and white wine, if used, boil the mixture until some of the liquid has reduced. The filling need to be somewhat wet but not runny.
  • Add the cooked rice and stir until everything is nicely blended. If needed, adjust the seasonings by tasting them.
  • Gently press each bell pepper to firmly compact the Cuban pork and rice combination within.
  • Set the air fryer to 180°C/360°F.
  • Apply a thin layer of cooking spray or olive oil on the exterior of the filled peppers.
  • As you place the stuffed peppers in the air fryer basket, make sure they are erect and not touching. You’ll have to cook them in batches if they can’t fit all at once.
  • Cook the peppers for 15 to 20 minutes, or until they are soft and the outside is starting to crisp up.
  • Take the peppers out of the air fryer with care.
  • Add some fresh parsley or cilantro as a garnish, along with any additional toppings you choose.
