Ingredients For Crispy Bubble Potatoes:

  • Two scrubbed russet potatoes (approximately one pound in total)
  • Two tsp mochiko, or sweet rice flour
  • One tablespoon of potato flour
  • One-half teaspoon of powdered garlic
  • One-half teaspoon of ground pepper
  • Three cups canola oil to fry with
  • Half a teaspoon of salt
  • Freshly chopped chives as a garnish
  • As a garnish, add paprika.

Instructions For Crispy Bubble Potatoes:

  1. After giving potatoes a few fork pricks, put them on a platter that is safe to microwave. For 10 to 12 minutes, on High, turn once, or until cooked through and soft. Give it a good five minutes to cool.
  2. After removing the potatoes’ skins, cut the skin finely and add it to a big dish. Using a potato masher or pressing through a ricer, mash the potato flesh and add it to the bowl. Add the mochiko, potato starch, garlic powder, and pepper. Mix everything together and knead it into a dough.
  3. Fill a oven or other heavy-bottomed pot with enough oil to reach a depth of one inch. Preheat to 350°F on medium heat. (Or, refer to the directions for the air fryer below.)
  4. In the meantime, roll out the dough to a 1 1/2-inch log and cut into roughly 20 pieces, each measuring 3/4 inch. Make a crosshatch design by pressing a fork into each piece. Add approximately one-third of the potatoes to the oil and cook for 5 to 7 minutes, turning frequently, or until golden-brown. Transfer to a platter lined with paper towels and season with salt. Proceed with the last two sets of potato fragments.
  5. Place the potatoes onto a platter for dishing. If preferred, top with paprika and chives.

Instructions for an Air Fryer Crispy Bubble Potatoes:

As instructed in Step 2, get ready. For five minutes, preheat the air fryer to 375°F. In the meantime, roll the dough into a log that is 1 1/2 inches wide, then cut it into 3/4-inch pieces. Spray cooking spray on the air fryer basket sparingly. Place half of the potato pieces in the basket and cook for approximately 10 minutes, turning once, or until golden-brown. Transfer to a platter lined with paper towels and season with salt. Proceed with the leftover potatoes.
