You have to try this recipe for healthy lasagna. I’ve been working really hard to discover some fresh and simple healthy dishes to share with you because fresh Year’s resolutions are looming huge over our January choices. I’ve never been into tight diets and I firmly believe in moderation. Even though Henry has been here for more than ten months, I still feel like I need to shed some baby weight, so I’m simply trying to make small adjustments here and there to make my favourite meals a bit less decadent.

Ingredients;

  1. One tablespoon of olive oil
  2. one tablespoon of unsalted butter
  3. two chopped carrots
  4. Two chopped celery ribs
  5. one diced zucchini
  6. one diced sweet yellow onion
  7. three minced garlic cloves
  8. one tablespoon chopped fresh thyme
  9. one pound of 90% lean ground beef, chicken, or turkey,
  10. one can of diced tomatoes
  11. one cup water
  12. one-half cup tomato paste
  13. five Barilla Oven-Ready lasagna sheets broken roughly into eight to twelve pieces
  14. one cup optional mozzarella pearls
  15. one and a half cups non-fat shredded Italian cheese blend
  16.  cups non-fat shredded Italian cheese blend
  17. ½ cup chopped fresh basil plus more for serving

 

Instructions:

  1. In a large, oven-proof skillet, heat the oil and butter over medium-high heat. Sauté the carrots and celery for 3 minutes, stirring occasionally.
  2. Add the diced onion and zucchini and sauté approximately 3-4 minutes or until onions are translucent and zucchini has softened.
  3. Add the garlic and thyme, stir, and cook for 30 seconds.
  4. Add the beef and cook 2-4 minutes or until beef has browned. Stir to break up any chunks of meat.
  5. Stir in tomatoes, 1-cup water and tomato paste.
  6. Do a taste test, and season, to taste, with kosher salt and freshly ground black pepper.
  7. Bring the mixture to boil.
  8. Add the pasta pieces and mozzarella pearls and stir.
  9. Reduce the heat to medium-low and cook, covered 10 minutes.
  10. Remove lid and cook 5-10 minutes or until sauce has thickened.
  11. Turn oven to broil.
  12. Top the beef mixture with the Italian Cheese Blend and broil just until cheese has melted and top is golden brown.
  13. Remove from the oven and sprinkle with chopped fresh basil.
  14. Serve with side salad and oven-toasted, buttery crostini.
  15. Enjoy!
